Time to savour the best of Islamic cuisine



Culinary delights: A table is set for the Id-ul-Fitr food festival at the Beach Orchid Hotel in Kollam.

The Id-ul-Fitr food festival at the Beach Orchid Hotel in Kollam is a culinary triumph comprising Peshwari, Kashmiri, Lucknowi, Hyderabadi and our own Malabari dishes.

Marinated in a message of religious harmony and garnished with the rich Islamic tradition, the festival dishes are a delight to the palate. The fusion Islamic cuisine is executive chef Rahul Bhattacharjee’s treat for Ramzan.

Peshwari cuisine is a legacy of the Mughals. Known for their richness, the dishes range from kebabs and koftas to tikkas and biriyani. Most of the dishes are cooked in blended tandoori sauce and tomato-based gravy. The lavish use of spices and nuts are the hall mark of Peshwari dishes. The popular murg Peshwari set on the festival table is undoubtedly a gourmet’s choice.

The Kashmiri cuisine, strongly influenced by the traditional food of Kashmiri Pundits, is for those who do not prefer spicy food. Gosth be aab, an irresistible dish of mutton cooked in milk is a popular dish at the food festival. Other popular dishes from the region include tabak maaz, rista jogan josh and daniwal korma.

There is a strong Mughlai influence on most of the Lucknowi kebabs and chicken dishes. The tasty vegetable mirch ka salan and the dum ke mahi fish dishes of the Hyderabadi cuisine make this the final word in variety cuisine. There is a wide variety of salads on offer and the exotic kubani (apricots) ka meetta for dessert. The festival began on September 28 and is on till October 05. The timings are from 7 p.m. to 10 p.m.
